Whole 30 Quick and Easy Soup V, GF


Here is a really quick soup that you can whip up on the fly with whatever you have left over. I had these beautiful carrots and some broccoli.

small cup for mixing paste if using
cutting board
serving bowl(s)


-soup base (I had a Thai sour curry paste made of chili, shallot, garlic, and salt you could use a homemade stock or store bought all natural stock)
-yam noodles (find at Asian grocery store and sometimes other grocery stores in the Asian section, they are traditionally Korean used for things like jap chae)
-vegetables shaved with mandolin or thinly sliced


Bring about 4cups of water to a boil.  In a small cup mix the soup base and some of the water together until dissolved. Add the yam noodles to the boiling water. Add the dissolved paste if using. shave desired vegetables into the serving bowls. After about 10 minutes the noodles are ready. Taste and adjust seasoning with salt, citrus or vinegar. Pour the hot broth and noodles over the vegetables and enjoy!
