Sprouted beans, legumes, seeds, nuts. They are all over the place. Why? Because consuming sprouted foods means you are eating live matter. Enzymes are released during the sprouting process that break down protein and fiber in a way that makes the nutrients more useful to your body. So eat up. Sprouts are very good for you and mung beans especially have a ton of nutrients. Below is my how to for mung beans but I have used the same method for chickpeas. 


2 quart container non metal water resistant


1.5 c dry mung beans


Add 1.5 c dry mung beans to a 2 quart container and soak for 1-3 days in the refrigerator. Drain the beans and rinse thoroughly draining off any excess water. Leave the beans in a well lit area with the lid of the container cracked. Rinse the beans at least once a day for about three days until the beans sprout. rinse and drain before storing covered in the refrigerator. 

Use in salads, sauces, sandwiches or wraps, food process into a hummus, garnish, snack. Sky's the limit. What do you do with your sprouts?
